So, this week’s blog is another catch up. I actually didn’t realise my last blog was my recap of 2020. All the days are just merging together and I’ve been trying to organise myself for the final stretch of uni. It’s crazy that I don’t have long left of my degree. January is always a month that starts off slow for me I never know what I want to bake. I’ve spent the last week planning some bakes and doing some uni work. Safe to say I haven’t been the most motivated.
As we all know I’m loving decorating brownies at the minute. Putting some buttercream just brings the brownies to life. I’ve made a box that was Valentines themed box that will be up near February. I had this wacky idea to make a rainbow themed brownie. I didn’t think it would work but this was the finished product. It was loud and colourful and I loved it. Certainly a bit crazy but I’ve not seen anything like it before. I think I’ve finally cracked this recipe, there was a few that sank but since then they’ve been perfect, just the right amount of gooeyness.
At the weekend I made a pineapple, spiced rum and coconut Bundt cake. I asked my dad what he fancied and that was his request. You can find the recipe on my Foodtryb account by searching @bakesbyhannah. This recipe was so fun to make especially as I’m not the biggest fan of pineapple or rum. My dad has been loving Dead Man’s Fingers rum and has been trying out different flavours. It gave the perfect subtle hint to this cake.
I’ve been trying to get ahead of photos because I know uni over the next couple of months will get crazy, so I wanted to make sure I have content just in case. Baking will always be my happy place and it’s really going to get me through uni. Starting the year with another lockdown was something nobody wanted to hear, but it’s given me more time to bake and distract myself. Also this week I made a mix box of cupcakes, messing around with some flavours and simple decorations. In the end I made of box of Biscoff, Kinder Bueno, Nutella, Lemon, Chocolate Orange and Jammy Dodger. They were so simple but I loved how they turned out.
I’ve actually enjoyed taking time to plan my bakes. Spontaneous bakes will always be great but a plan always helps. I’m so excited to start ticking things off my baking list this year. I also remembered my little website and Instagram will be two next week which is crazy. This time last year I was just hitting 2000 followers and I’m coming up to nearly 7000 now. One of my goals for this year is 10000 followers by the end of 2021, so fingers crossed. I’ve got no idea what I’m in the mood to bake this weekend, so next week’s blog will be a surprise. This was just a little catch up blog, as I’ve just been trying to organise my life the last couple of weeks. I hope you have a safe week.
