Biscoff Brownies...

So, this week’s blog is all about Brownies. Last week I decorated my first brownie square and I actually fell in love with how it looked. Below you can see how it turned out, that brownie square just has chocolate chunks in it and then I added even more chocolate by piping some chocolate buttercream. I found a new obsession after making a box like this and they make the perfect present if you want a change from cupcakes. It would help if I bought boxes that actually fit them in next time though. However the recipe for this week’s blog is a step further, with Biscoff added. I thought my Biscoff bakes were over, then I decided to make my mam some brownies to take to school with her. The Biscoff was just staring at me, so I just had to add it in to these brownies, I hope you are ready for this recipe.

 
 

Ingredients

-100g butter softened

-4 eggs

-220g milk or dark chocolate

-250g caster sugar

-vanilla extract

-50g cocoa powder

-Biscoff biscuits

-70g plain flour

-2 tablespoons Biscoff spread melted

 

For the brownies start by melting the chocolate, I just melted mine in the microwave but you can melt it over water. Once the chocolate is melted put it to one side to cool slightly. Whisk the caster sugar and butter together until smooth. Its best if the butter is softened, you can either quickly blast it in the microwave or you can even grate it to make it soften quicker. Gradually whisk in the eggs and add the vanilla extract. At this point you want to add in the chocolate making sure it’s all mixed together. Fold in the flour and cocoa powder and you should have a really thick gooey brownie mix. You can also add some crushed biscuits in at this stage if you want. Before you pour the brownie mix in, add some Lotus biscuits to the bottom of the tin so you have a biscuit layer. Pour over the brownie mix and smooth it out over the biscuits. Take the melted Biscoff spread and swirl it on top of the brownies using a tooth pick or a skewer in any pattern you want. Add some crushed biscuits and bake the brownies for 30 minutes at 180 degrees.

 
 

When I took my brownies out at this time they were still gooey, so you can always add them in longer if you would prefer a more cooked brownie. Leave the brownies to cool, I know this is the hardest part. Once cool cut into square and enjoy. As I said I made these for my mam to take to work but we needed some taste testing to make sure they were alright. I have to say Biscoff brownies are just another level of delicious bakes. I loved this recipe and I would certainly recommend trying them if you love Biscoff. If you just want plain brownies do exactly the same, but miss out the Biscoff spread.
