Biscoff Cookies...

So, this week’s blog was a one I would definitely recommend trying. This week’s blog is Biscoff stuffed cookies. When I was at home I made took full advantage of my Kitchenaid and thought that cookies were perfect to make. I knew I had my Grandmas cake to make at the end of the week and considering I always make cake, cookies were a nice change. Can I just say right now, easily these cookies were the best ones I’ve ever made. I’ve never done stuffed cookies before so I was optimistic, I love Biscoff so didn’t think anything could go wrong (they didn’t disappoint).

 
 

Ingredients

· 120g unsalted butter

· 120g light muscovado sugar

· 60g Biscoff spread

· Crushed Biscoff biscuits (approx. 15)

· 150g plain flour

· 1 teaspoon cinnamon

· 1 teaspoon baking powder

· 70g caster sugar

· 1 egg

· 1 teaspoon vanilla extract

· Extra Biscoff for the centres

 

I made around 12 cookies, this obviously varies depending on the size you want them to be. I weighed each cookie around 40g give or take. I started by freezing small balls of Biscoff. I just used a spoon to scoop some out and put them on plate with baking paper. They only took around 30 minutes to harden. I started by beating my Biscoff and butter together then I added my sugar. It was so satisfying watching my Kitchenaid do this, something I’ve missed since coming back to uni. It probably sounds really sad but it just makes me happy when I walk into the kitchen and see it. Once the sugar was added the mixture became lighter and was very smooth. I added my vanilla extract and mixed then my egg. I added the rest of my dry ingredients, the flour, cinnamon, crushed biscuits and baking powder. I let this mix together until it was all incorporated. You want to be careful not to overmix the cookie dough because they will become too flat when baked. I scooped balls of cookie dough out around 40g and took a frozen ball of Biscoff and shaped it nicely into a ball. I did several batches because I didn’t know how much they would spread. After my oven was preheated to 180 degrees, I baked the cookies for 10mintues.

 


 

I took my photos and tested out just how gooey the centre of the cookies were, I couldn’t help myself. They not only looked amazing but they smell was heavenly. I took my photos and my family just couldn’t resist diving in to get one. After the cooled down I wanted to see what they were like heated up slightly. I heated one in the microwave for 10 seconds and oh my was it delicious. They were the perfect size to sit on top of mugs, so my parents warmed theirs up that way. They tasted just like the waffles you get to put on hot drinks. It was one of those bakes that I was sad when they ran out. They are easily my favourite cookies I’ve made and I might have to look at some complementary flavours.

 
 

On the topic of biscuits, something I never got the chance to blog about was some very special biscuits. My friend at uni, Charlotte, asked me make some biscuits for her brother Blake’s 1st Birthday. I always find it an honour and pleasure to be asked to make things for anyone. Contributing to a first birthday is a special one. I’ll not repeat the recipe I used, if you want that recipe you can find it on my Valentines post. Charlotte was at my house when I made those biscuits and had a little tasting session to see what she wanted. For Blake’s biscuits I made half vanilla and half lemon ones. I coloured the biscuits blue and obviously used blue glitter, like I need an excuse to add glitter to everything. I’ve not had a lot of practice at icing biscuits and for technically a first attempt I was so pleased with how they tie dye effect of the icing turned out. I realised you need a lot of patience when doing this and for some reason my hand decided to start shaking when I really need a steady hand to ice. I loved getting the feedback from the Charlottes family and was so happy to hear Blake had a great birthday. It’s been a busy week back at uni, as per usual baking is a nice stress reliever.
