Caramel Apple Cupcakes...

So, this week’s blog adds a bit of sparkle to my website. The cupcakes add the perfect autumnal touch to these cold evenings. I actually made these cupcakes the other week for Bonfire night. I made caramel apple cupcakes and added a sparkler for good measure on Bonfire night.

 


 

For the cupcakes I started my peeling and grating three apples. I added this to my bowl and added 175g of self raising flour, sugar, butter, 3 eggs and 1 teaspoon of baking powder. I also added 2 tablespoons of maple syrup and a dash of cinnamon and mixed spice. This already made it smell autumnal. I managed to make 18 cupcakes from this mix. I used silver cupcake cases and spooned in the mix once I was happy with the consistency. I baked the cupcakes for 15 minutes at 175 degrees. I was so happy with the rise on the cupcakes and the colour was a nice golden brown. I let them cool before I decorated them.

 


 

For the buttercream, I added 250g butter and 500g icing sugar. I also added 2 tablespoons of milk and 2 tablespoons of maple syrup. I didn’t want to use my maple syrup from Canada because I’m saving that. I also added 1 teaspoon of cinnamon. I was quite pleased with the consistency of the buttercream. I cored the middle of all the cupcakes and filled the holes with Carnation caramel. I filled a piping bag with a star nozzle and piped the buttercream onto each cake. The cinnamon gave it a nice speckled appearance. I drizzled some spare caramel on top and added some fudge pieces.

 

When it came to get a photo of them, I’d always wanted a photo with a sparkler in the top. I waited until it was dark outside and lighted a sparkler in one of the cupcakes and used my log stands for a rustic look. I was so happy with how the sparkler photos turned out. The taste of the cupcakes was good as well because the apple and cinnamon worked really well and the caramel was just what was needed. They were a massive hit with my family because the apple was in just the right quantity. I was so pleased with how they turned out. It also allowed me to start doing some Christmas bakes when I got back to uni but you’ll have to wait to see them. I hope you have a lovely week.
