Cheesecake Easter eggs...


Happy Fry-day! So last week’s Easter themed bake has kind of opened the door for Easter for me this year. With less than 3 weeks to go, I thought why not dedicate these blogs to recipes you can have a crack at home. (Disclaimer: I may be hatching a few puns in this blog so I apologise in advance. Can you keep track of how many I make?)


 


 

From the blondies last week the recipe was easy and didn’t take much prep at all, this bake was even simpler. It’s funny because if I don’t know what to bake, the flat has a little brainstorm of ideas. I originally wanted to make something Mother’s day related, for this Sunday. Full credit to Despina for choosing this week’s bake, Cheesecake Easter eggs. I was sceptical because I’m not a huge fan of cheesecake but I thought why not whisk it… I know for a fact my mam and grandma would love if I baked these for them this weekend if I was home.


 


 

When we went shopping for toppings I think it’s safe to say me and Despina got carried away and slightly overbought. I was a bit shell shocked when I saw the price of the shop. From the recipe we made 5 Easter egg cheesecakes and had a half left over to dip in to them. I started by mixing the cream cheese and the icing sugar together, until it was smooth. I slowly added the double cream, doing this too quickly could’ve made the mixture split. Luckily this didn’t happen and I added a few drops of my trusty vanilla flavouring. I was surprised that I liked the cheesecake filling, not even eggs-agerating but it was really good. The addition of the double cream made the filling a lot thicker and was easy to spoon into the Easter eggs. I trusted Despina to crack the eggs in half, we decorated them together as well. We took the decoration very seriously and even had time to think of names for each of the eggs. I know you’re egg-cited to see how creative we were.


 

‘Not so mini egg’- crushed mini eggs with M&M mini eggs placed on top as well. They gave the egg a nice pop of colour.

Egg-ception- an egg inside an egg, a caramel egg cut in half. I tried melting the rest of the egg to drizzle on top but that didn’t go so well so I just melted some normal chocolate and piped that on top.


Golden egg- pretty self eggs-planatory , just full golden eggs added with a sprinkle of gold glitter for good measure.

Crème de la crème- mini crème eggs cut in half and scattered on top.

A hop in the tub- this name was a stretch, but the decoration involves mini Malteaser bunnies. To make them look like they were swimming you could put them in whole or cut the bottom off so the head pops up. With orange smarties maybe to represent carrots but that’s up to your imagination.


 

Once they were decorated the cheesecake filling was starting to set, so we took photos of the eggs and placed them in the fridge to set. There was no baking involved in this week’s bake and ironically it's one of my favourite things I’ve baked in a long time. There is endless possibilities of decorations egg-sactly what everyone needs to try this Easter. When we got back to the flat we thought of more fillings we could’ve got; cookies and cream with oreos , crunchies with honeycomb or even popping candy to give and eggs-plosive burst of flavour. The versatility of this recipe is endless and doesn’t take long at all, this recipe can be adjusted to make more or less than 5 eggs. Something about this creation made me really eggs-cited and I’ve got so many ideas in my head for Easter themed bakes in the next weeks. I promise I’ll tone down the egg yolks.
