So this week’s blog seems well overdue. It’s been too long since I last updated my blog and now seems like the perfect time to update it. The last time I blogged was Charlotte’s Mamma Mia cake and a lot has happened since then. I wanted to focus on finishing my degree and to be honest I actually haven’t baked that much since. I made my Dad’s birthday cake and the odd brownie in between. I really haven had the motivation to bake recently the last couple months I’ve been focusing on uni work.
I finished my dissertation which I really enjoyed writing and researching looking back on it. That took a lot of my time and I didn’t really have time to bake in between. Just after I had my dissertation deadline I had to start revising for my final exams. I always set out to start baking once I was back home again, which has ended up happening. My uni degree ended on Wednesday after I had my final presentation. It’s so crazy to think that my undergraduate degree is over and the last three years have flown by. As well as finishing my degree, I’ve come back home to a new addition to the family. Vinnie the 9 week old Cockapoo, who inspired my first bake in a very long time.
Vinnie has been a little whirlwind whilst he has been finding his feet and settling into his new forever home. He’s got the cutest little eyes and loves to create mischief. Cupcakes that looked like him seemed like the perfect way I know to welcome him home. I’ve got plans to work on doggy friendly cakes in the future so he can be involved. These cupcakes were Biscoff flavoured, as I haven’t used it in ages. Then just simple vanilla flavour buttercream with brown food colouring and a drop of black to make it more like Vinnie’s colour. I used a grass nozzle to replicate his fur and I love the character is gave each cupcake. The added details were made using edible eyes and fondant. They were actually more simple than I thought they would be and each cake is adorable.
I can already tell Vinnie is going to keep me on my toes. It’s so nice being finished with uni and I’ve got a lot more time now to focus on baking and planning new recipes. It’s nice that life feels like it’s getting back to some normality. Everyone seems to be loving meeting Vinnie and I’m sure these cupcakes will go down a treat with my family. I do hope to post blogs more regularly now I’m finished uni but we’ll see what happens. I hope you can see the resemblance between these adorable cupcakes and the new little pup in our life.
