Frozen Birthday Cake...

So, this week’s blog was a cake I’ve been planning for ages. A Frozen themed cake for one of my best friends. I also love getting asked to bake cakes for people, especially friends. I had this one in my planner for a good couple of months and made sure I had everything ready. I baked my cakes the night before and then decorated the day it was needed. I felt a lot of pressure making this cake because I know how much my friend loves Frozen. She was the person who forced me to watch Frozen for the first time a couple of months ago and I loved it. I actually loved how the buttercream turned out on this cake and thought it was really effective.

For the cake I made two cakes. Using my standard 175g of caster sugar, butter, self-raising flour, 3 eggs and 1 teaspoon of baking powder. My friend just wanted a plain vanilla cake so I added some drops of vanilla flavouring. I was originally meant to colour the cakes blue but completely forgot. It was all good though because my friend didn’t mind. I baked the cakes for 30 minutes at 180 degrees and then let them cool. I wrapped them in cling film and put them in a box until I came to decorate them the next day. The cakes had a really good height on them which I was happy with. I couldn’t wait to see what it was like when decorated.

I got up a lot earlier than I needed to the next day, just so I knew the cake was decorated. I made a massive batch of buttercream just so I had enough to start with (turns out I still needed more). I let 500g of unsalted butter soften, and whisked it in a bowl. I gradually added 1kg of icing sugar and some milk and some vanilla extract. This honestly looked like enough at the time. I started by filling my cakes with strawberry jam and the buttercream. I did a crumb coat then let it set in the fridge.

I coloured some buttercream a navy colour and then a lighter blue colour. I was just going to add it on top and smooth it out and see what happens. I had no idea it was going to turn out how it did. I did buy some icing and tried making snowflakes but it just didn’t work out how I wanted it to. So I settled for some sprinkles I had from Christmas. I did another layer of white buttercream on the cake. I then used a palette knife and added some blue splodges all over. I then used my smoother until I was happy and I loved the cake before I added anything else. I added some snowflakes around the outside. I decided I wanted to pipe some buttercream on top but I needed to make some more. I added 100g butter and 200g icing sugar but the first batch split so I had to make it again. Once I made it again I mixed blue and white buttercream on the top of the cake. My friend had bought some Frozen toppers she wanted on the cake. I added some white glitter to look frosty and the toppers. I added a Happy Birthday topper and then stood back to see what it looked like.

I was so pleased with how the cake turned out. I kept on wanting to add stuff to it but I didn’t want to spoil it and add stuff just for the sake of it. I took my photos and boxed it up. I sent some sneaky photos to my friend and when she picked it up she absolutely loved it. We then had the job of getting it in an Uber to take to her place, I didn't Let it go... It was a great team effort, everything was going great until I nearly fell backwards down the stairs with the cake. I made a smooth recovery though and the cake and me were alright. It was such a relief when the cake was finished. My friend had a great birthday and I’m so happy my cake was able to make her so happy. I’m hoping to make a St Patrick’s themed cake this week, so we’ll see what happens. Have a safe week.

Lots of love,

Hannah x
