How to make Highland Cow Cupcakes...

So, this week’s blog is a little different to normal. I wanted to describe how I made these fabulous cow cupcakes. Now these cows are probably up there with my favourite animals. I was sitting doing uni work at the start of the week and these cows came up on my feed whilst I was having a break. I’d never even thought of making them into cakes before. After I had a little search for inspiration I couldn’t stop thinking about how to make them. I finished all my lectures for the week and gave myself a baking day because the thought was really distracting me.

 
 

What you’ll need

· A round cutter- the size of a cupcake

· Fondant icing

· A range of colours

· Icing sugar

· Edible glue

· Black sprinkles for the eyes alternatively you can use black fondant

 

I used this really handy silicone baking mat that makes rolling icing so much easier. Just dust some icing sugar on the surface. I made 6 orange cows and 6 rainbow cows inspired by the work of Steven Brown. Rather than colouring the icing you can buy coloured fondant to start with. Start by rolling out the black icing and cut 6 circles and place to one side, do the same with the orange fondant. I used colour splash and neon colours to achieve my colours. I already had Renshaw black icing. Next making the horns, using the white fondant roll the fondant thinly and just bend it upwards to create the horn. I made my horns just over 1cm in length. For the mouths, using some pale pink fondant or beige fondant for the rainbow cows, roll a small cuboid about an inch long. I used the tip of a fondant nozzle to create a mouth and a decorating tool to make the nose. Move to one side. Next probably one of my favourite parts, the hair for the cows. Taking the range of colours and the orange, roll thin stripes out of each colour. This can be as mismatched as possible.

 

Now the assembly of the cows. Start by gluing the horns and mouth onto the cakes. Then just go mad giving your cows a fringe and some fur with the rolled stripes. They can be as carefree as possible just use some edible glue to stick it on. To finish the cow just glue on an eye in the gap just like the photo. I left my toppers to go hard overnight.

 
 

Bake some cupcakes, whatever flavour you like and whip up some buttercream. I made my cupcakes orange and vanilla flavour. You don’t realise how happy these cupcakes made me they are some of my favourite yet. I just couldn’t wait to share them. I thought once I baked them and got them out of my system I would be free of distractions and actually be able to focus on uni work, that was until I had another idea. That idea is being trialled at the weekend and I might actually be able to do uni work now I’m ahead on my bakes.
