Jam Biscuits...

So this week’s blog is getting into the Valentines spirit with some jam biscuits. I don’t really make biscuits as much as I’d like too but these biscuits were a good change. I thought I’d put a Valentines twist on them and cut some hearts out of the biscuits so you could really see the jam. I was kindly sent the jam by a lovely business called Geordie Jams. I couldn’t wait to try their jam and was excited to bake something special. I got the Strawberry and vanilla flavour and it was delicious. It worked in these biscuits perfectly and it was very tasty. Ingredients

· 250g softened butter

· 120g golden caster sugar

· 400g plain flour

· Custard flavouring (or you can use vanilla)

· Strawberry jam

· Crinkle cutter and a smaller heart cutter

 

I added the butter and sugar in a bowl and mixed it together and added some flavouring. This all came together and then I added in the flour. I added a dash of milk because it was a little crumbly. I then rolled the dough out onto a floured surface, I rolled the dough until it was about the thickness of a pound coin. I then cut out my biscuits alternating between a full biscuit and then cutting hearts out of the centres. I made 15 biscuits, so 15 full ones and 15 with hearts cut out. With the dough I had left I baked some mini hearts as well. I preheated the oven to 175 degrees.

 
 

I baked the biscuits in batches but before I baked them I put each tray in the fridge for 10 minutes. I then baked the biscuits for 10 minutes until they were just starting to change colour. I left the to cool for a couple minutes and then moved them on to a cooling rack. The hearts only needed like 5-6 minutes in the oven. I left the biscuits to cool completely.

 

Once they were cool I separated the biscuits into two piles. I put all the full biscuits on my tray and placed some of that delicious jam leaving a little gap around the outside. I then added the hear biscuit on top and added a little more jam to the centre. Repeat this for all the biscuits making sure they are in line with each other. I took my pictures and then finally let my parents enjoy them. This recipe is super simple it’s basically a shortbread recipe with some lovely jam in the middle. I had so much fun baking these biscuits and they are the start of some Valentines content this week. I hope you enjoyed this recipe it could be the perfect easy treat to make next weekend.
