KitKat Cookies...

So, this is my last bake at home before I go back to uni. Thought I would keep it nice and simple with some cookies, but I think these were so much better than the ones I did at the start of the year. I added some KitKat pieces on top as well as some chocolate buttons, therefore KitKat cookies are this week’s blog. I can’t believe that it’s time to go back to uni this weekend, but then that means there’s a new kitchen to get used to. I have no idea what bakes I’m going to do next week, I might leave that up to my house mates. This cookie recipe was straightforward and really simple to follow, you can add whatever toppings you would like.

I started by adding 125g softened butter to a bowl. It makes it so much easier if the butter is softened. I creamed the butter with 115g brown sugar and 110g caster sugar. If the butter is soft this happens a lot quicker. I added some vanilla flavouring along with 1 egg. This made the mixture quite sticky, the addition of the self-raising flour brought it together as a cookie dough. I added 220g self-raising flour, it makes it easier to use your hands to incorporate all the mix together. You can if you want add chocolate chip pieces, I didn’t because I wanted to add the chocolate on top. I had preheated the oven to 180 degrees. I rolled balls of dough around 30g and placed them on a baking sheet, spreading them out. I let them bake for 7 minutes and before they had a chance to cool I added some chopped KitKat pieces on top.

My first 4 I made, I put the chocolate back in the oven, but I didn’t like how the chocolate looked bubbled on top. It was better to just press the chocolate pieces on before they had a chance to cool and harden. I was so pleased with the size of the cookies, and for the last batch I made smaller ones. There was no order to how you could place the chocolate, they really didn’t need to look perfect. There’s a joke hidden with my choice of chocolate. With the slogan of KitKat, ‘take a break, have a KitKat’, considering how we all thought my foot was broken, my dad thought he was being clever. I feel these cookies look a bit rustic and it didn’t take long to get a photo.

I think these were my favourite cookies I’ve made, pretty quick and simple. Considering I’m meant to be resting my foot, I even sat with a chair in front of the oven watching the cookies so I wasn’t standing. There isn’t really much more to say about these cookies, apart from you can be very adventurous when making them. Next week’s blog will be from something baked at the new house, very exciting. I hope you have a lovely week, I’ll certainly enjoy getting settled back into Leicester.

Lots of love,

Hannah x
