Mamma Mia...

Let’s have a catch up. So, this week’s bake is focused on my best friends birthday cake. Before I get started in that one, I just wanted to explain why I haven’t been posted as regularly as I’d like. Obviously getting near the end of my degree is taking a lot of my time and even though I’m having time to bake it’s hard to write up blogs and recipes at the same time. This lockdown as well has been harder than the rest, luckily, I was able to make a bubble with my friend at uni and we’ve been trying to make the best of it. We’ve spent the last 30 days completing our calendar of fun things to do each day to keep us entertained leading up to her 21st birthday. Hopefully in the next couple of weeks I’ll have a better balance of uni and baking but baking is helping to keep me sane in the midst of my dissertation right now.

So, let’s talk about her cake. I made my friend a frozen themed cake last and year she’s told me about this theme since last year so I had plenty of time to plan. When she said Mamma Mia themed I had absolutely no idea how I was going to convey that theme into a cake. This date has been in my calendar since last year as I had to make her 21st cake special.

I found some inspiration and ordered a themed topper and hoped for the best. I did establish that my uni room wasn’t made for cake making but I utilised all the space I had. I ended up making a massive 3 layer 8inch cake but I was so happy with how the layers came out. In between each cake was chopped white chocolate and vanilla buttercream. I used the set of Mamma Mia as inspiration for the decoration and made some little cute flowers which made the top of the cake look less plain.

I loved how this cake turned out and my friend was so happy with it. It was a nice break from uni work just focusing on this cake with nothing else to worry about. I’ve also had the chance to plan a few bakes for the future which I’m really excited to try. Hopefully these blogs will be a bit more regularly soon. I hope you are all staying positive and safe. Have a lovely week!

Lots of love,

Hannah xx
