Mini Rainbow Cupcakes...

So, this week’s blog is a colourful one, a Mini Cupcake Rainbow. A rainbow has become a well-recognised symbol in the times we are living in and I wanted to make an edible rainbow to share some joy. I bought a mini cupcake tin I’ve been waiting to try and this was the perfect excuse. I think this blog will be short and sweet but I think the rainbow speaks for itself.

 


 

I wanted to test how many mini cupcakes I can make from my usual cupcake recipe. I started by adding 175g of self-raising flour, caster sugar, butter, 3 eggs and 1 teaspoon of vanilla extract to my bowl. I also added 1 teaspoon of baking powder and mixed all the ingredients together until smooth. I had preheated the oven at 170 degrees and lined my tin with 24 mini cupcakes. I filled them each with one teaspoon of mixture and baked them for 8 minutes. I had quite a lot of mixture left which didn’t surprise me, I managed to make another 24 with the remaining mixture. In total I made 48 mini cupcakes. As they were bitesize they didn’t take long to cool at all. It was at this point I made the buttercream, again I wanted to see how much my normal mixture makes.

 


 

I had left 250g unsalted butter soften and beat this for five minutes until it had become lighter in colour. I then got my mam to slowly mix in 500g icing sugar, she likes to get involved and help in. I found it funny when she made a nice icing sugar cloud in the kitchen. I added a splash of milk and some vanilla and it was so smooth. Next was the fun part colouring the buttercream each colour of the rainbow. I had weighed my buttercream and divided it by 6 and put the plain buttercream in each bowl. I added some red, orange, yellow, blue, green and purple food colouring and mixed it in. They were very bright and I had high hopes. I had laid a cling film square on a table and spooned each colour on the wrap next to each other. I was then able to roll the cling film together so it made a sausage. I used a Wilton 6b star nozzle and added the cling film roll inside my piping bag. I then piped little stars onto each cupcake and the colours gradually came out more and more. I arranged them around a fondant rainbow I made earlier and then took a lot of photos inside and outside. The natural light really showed the colours off well. They were my own little way of sharing a Thank You for all the amazing NHS staff.

 


 

I’ve been very busy baking this week not only were these cupcakes on my list, I also tried making some bread. Which for a first attempt actually turned out quite successful. A precious delivery of caster sugar and bread flour arrived which made my day. I also had the pleasure of making the lovely cupcakes you see above for a friend who works in the local hospital. I loved how they turned out for her and I hid a rainbow on the inside by colouring the cake mixture.
