Oreo Brownies...


Well, it’s certainly been a busy week, hasn’t it? Going back to uni after a little trip home and then back into the final push to the end of the first year. Still can’t believe how quickly it has gone by at all. Since I’ve been at uni, before my website was launched I tried making some brownies and they went down a treat in the flat, so I thought why not make them again. On Wednesday this week was National Oreo day, when I made these brownies was also on Wednesday so why not put them both together. I made these on my day off from uni, can I just say they made the flat smell amazing for the rest of the day.


 


 

I think the good thing about brownies is the fact you can literally add anything to them. Bringing my square 20cm tin to uni with me after Christmas was one of the best things I brought back with me. I lined my tin with baking paper and I was actually sad enough to use a ruler to measure it perfectly. I used two pieces going across the tin to make handles to make it easy to lift the brownies out of the tin. I melted 165g of unsalted butter and 150g of milk chocolate in the microwave. Alternatively I could’ve melted it in a pan but the microwave was quicker. In a separate bowl I whisked 3 eggs and 2 egg yolks along with some vanilla flavouring. I did this until they went light and fluffy. After this happened I added 165g light muscovado sugar in the egg mixture a little at a time. It was best not to rush the addition of the sugar. I slowly added the chocolate mixture around the edges. By this point the mixture became stiffer. Once this was all incorporated I added 2 tablespoons of plain flour and 1 table spoon of cocoa powder. Now to add the Oreos, you can obviously use as many as you would like, for mine I used a whole packet. I added about two thirds of the packet into the mixture breaking them up into smaller pieces. I poured this into the tin and with the remaining Oreos I broke them up and pressed them into the top. I had already preheated the oven to 180 degrees.


 

I baked the brownies for 30 minutes because I didn’t want them to be too gooey. Unlike last time when I baked the brownies they were a lot better than last time because they held their shape. Also unlike last time they didn’t crack on the top. The baking paper handles were perfect for lifting the brownies out of the tin. They were completely cool when I took them out of the oven and got Despina’s help in cutting them into pieces. We did laugh because on Bake Off the night before it was said that the perfect brownie had a visible line, which mine had. To display the brownies for the photo, I used my chopping board I bought from Wilkinsons. With Despina’s helpful opinion we decided how to split it into three and then everyone in the flat could cut whatever size slice they wanted for themselves. Last time it was really sickly and the squares were too big, so at least I’m learning from last time. Like last time they were successful.


 

Also this week it was Shrove Tuesday which meant only one thing in the flat, pancakes. I tried making some pancakes but they were nothing compared to the ones Jack made. You can see mine in the photo below, I topped them with banana, Nutella and whipped cream, Despina’s choice. Pancakes were a great choice to get us through the middle of the week and then these brownies were a nice little treat.


 


 

Overall, the brownies were a great hit but I think next time if I make them again I’ll try them with a different addition. I’m already planning next week’s bake as its St Patricks day on 17th March so look out for that, I may even try something I’ve never tried before.
