Rocky Road Brownies...


So, this week’s blog was a very spontaneous one. I was sitting on Monday just about to watch the Love Island final, and suddenly decided to see if I had the ingredients to make brownies. I wasn’t going to make them on the Monday but once I saw I had the ingredients, I just decided to multi task and make brownies and watch the final. At first I was just going to make some normal brownies and not even blog about them, but then I saw mini marshmallows in my baking cupboard. I searched the cupboards and found some digestive biscuits and remembered I bought some fudge sauce. That’s when the idea was in my head and I couldn’t wait until the next day to make them.

 


 

For the brownies, I started my melting 350g dark chocolate and 200g butter together. I melted it over a pan of simmering water. I had my iPad balanced watching the Love Island final and was melting my chocolate at the same time. In a separate bowl I whisked 3 eggs until they were pale and added 250g dark muscovado sugar. The sugar and the eggs became quite thick, I then gently added the melted chocolate and folded it together. I added 50g self raising flour, and mixed it until the mixture was smooth. The mix was really rich and thick, because there wasn’t much flour in, I knew it was probably going to be quite gooey. I added about 25g of ground almonds for a little nutty flavour. I had already lined a 20x20cm tin with baking paper using two pieces to create handles on the tin, to make it easier to lift out. I baked the brownie in a pre-heated oven at 175 degrees for 35 minutes.

 

When I checked the brownie at 30 minutes it was still a bit too gooey for my liking so I left it for another 5 minutes. I think the perfect brownies are those that are really gooey on the inside, and these brownies were certainly that. I waited for them to cool in the tin for like 15-20 minutes. I couldn’t wait to decorate them. I managed to lift the brownie out of the tin and put it on a cooling rack. The decoration was pretty simple, I sprinkled some mini marshmallows on top along with some crushed biscuits. I’ve been waiting to use Roly’s fudge sauce I bought in Keswick and this seemed like the perfect chance. I put some in a piping bag and drizzled it on top in a diagonal motion all over the top. They looked incredible and I was so excited to try them, but I needed to get a photo first.

 

The inner perfectionist didn’t like the baking paper that you could see when I put it on the board. So I managed to get the brownie off the baking paper and put it on the board for a photo. The brownie was extremely soft and gooey so it was a one time movement getting it on the board. Annoyingly it didn’t go on straight, but it was still workable. I took a few photos and I was actually happy with the first one I took for a change. When me and my mam tested the brownies they were still warm, they were heavenly.

 


 

I recommend having a slice of brownie, heated up for 20seconds in the microwave to warm it with some vanilla ice cream. This week has been very special for me and the baking side of my life. I hit 1000 Instagram followers which is incredible and I got some little business cards made just for a bit of fun. They are so perfect and my family will love me giving them little piles to give to friends and family. It’s been great this week baking a few things in advance for when I’m in Canada. The chocolate cake I made for 1000 followers will be up on a couple of weeks. I hope you have a lovely week.
