Spooky Cookie Cups...

So, this week’s bake was very spontaneous. It didn’t even make the shortlist for the Halloween bakes I had planned, but I’m so happy I managed to put a Halloween twist on it. This week I baked some Rolo stuffed cookie cups. I’ve never done anything like this before and had no idea if it was going to work. If it didn’t work I had another Halloween bake lined up I could try. I was so pleased with how they turned out and I’ll definitely be making them again in the future but putting another filling in the middle.

 


 

The cookie cups were really simple and quick to make. I added all the ingredients in at once and just mixed them together until there was a dough. I added 250g butter, 200g caster sugar, 500g self raising flour and 2 teaspoons of bicarbonate of soda. I added 200g of chocolate chips and 2 eggs. I used my hands to bring the mixture together. I was very apprehensive that the cookie cups were going to work. I used my cupcake tray and rolled 12 balls of dough 70g each. I placed them in each of the holes and pushed the balls creating little cups. I had some cookie dough left over that would become the lids of the cups. In each cup I put 3 Rolo’s which was the perfect amount. I rolled out the remaining dough and used a small glass to cut out the lids for the cups. I gently pressed the lids on top of each cup so they were flat. I baked them for 20 minutes at 170 degrees.

 


 

Whilst they were baking and making the house smell of cookie goodness, I made the white chocolate skulls. I bought some skull ice moulds and I always intended to melt chocolate into them. I melted one bag of white chocolate buttons but that was only enough for 2 skulls, which I couldn’t believe. I left the skulls to set for about an hour. When they were set and the cookie cups had cooled I started making them Halloween themed somehow.

 


 

It took me a lot longer than it should’ve done to get the skulls out of the moulds. I used a knife to trim the edges and I loved how they looked. Used some red food colouring mixed with water I pained the eyes to look like they were bleeding. I used some edible gold paint for the other skull. I was surprised how easily the cookie cups came out of the tin. I sat the skulls on the cookie cups. On a couple of the cups I added some glitter to match the skulls. The main focus of this bake was really the cookie cups themselves. As you can see from the photo below they looked amazing when they were cut into. Although they were amazing, they were even better when they were heated up for about 30seconds so the chocolate inside was melted. I would recommend serving them with ice cream or whipped cream or even a glass of milk. After both myself and my housemate burned ourselves not realising how hot the chocolate would be, don’t be like us and let it cool for a second.

 


 

When it came to taking a photo I was so happy with how the photo came out. My housemates had the idea of putting some candles around them and it made them stand out so much as very as making them feel like a Halloween bake. I took far too many photos but loved the atmosphere the candles created in the photo. I like how I was able to put a Halloween spin on these and also try something new at the same time. I have a few ideas for the final Halloween bakes so we’ll see what ideas work out. My housemates loved the cookie cups and I’ve already thought of ways to adapt them so the next couple of months.
