White Chocolate Orange Cookies...

So, I’m very excited to share this week’s blog of white chocolate orange cookies. Ever since I finally find a white chocolate orange to try I knew I wanted to make some cookies. Recently I’ve got caught up in making cakes and it seems like ages since I last made some cookies. We are in a second lockdown now and unlike last time I’m back at uni. Which means I can’t bake as much as the first lockdown but to keep my own sanity I’m going to try and bake at least once a week. I think these cookies are perfect to keep morale high during this lockdown not that I need an excuse to justify making some delicious cookies.

 
 

Ingredients

· 1 white chocolate orange

· 1 tbsp orange juice

· 115g room temp unsalted butter

· 95g brown sugar

· 45g caster sugar

· 200g plain flour

· 1 egg

· 1/2 tsp bicarbonate of soda

· 150g chocolate chips or chopped white chocolate (extra white chocolate is optional to drizzle over at the end)

 

Preheat the oven to 175 degrees and line some baking trays with grease proof paper. Start by beating the sugars and the butter together until smooth. After this add the egg and orange juice and mix together. Once you have mixture add the flour and the bicarbonate of soda and mix together to form a cookie dough. Stir in the white chocolate chips and you are ready to bake your cookies. For the first cookie I actually measured out each cookie to around 40g to keep them the same. I baked one cookie to start with as a test and then baked the rest of the cookies. I baked the cookies for 10 minutes and then took them out when they were still soft, this helped keep them gooey.

 

The first one was a test for me and I put a segment of white chocolate orange on straight away, this wasn’t the best idea as it made it melt straightaway. So I left the cookies to cool before I added the white chocolate orange on top. I used some melted chocolate to stick this to the cookie and for some of them I drizzled some orange coloured chocolate. I couldn’t wait to try the white chocolate orange and the cookies come out so well. This was my first time trying a white chocolate orange and it complimented the cookies really well.

 
 

I really enjoyed taking photos of these cookies but I couldn’t wait to try one. In the end this recipe made 12 cookies. This is the perfect recipe to start the Christmas baking because you can’t beat a chocolate orange at Christmas. This week has been full of planning festive bakes and I can’t wait to get started.
